Health Benefits of Einkorn
Einkorn is a heritage wheat grain. It is the only wheat grain not modified by man. It has more beta-carotene and vitamin A than modern wheat. Einkorn is high in protein, iron, and manganese. When sprouted, the vitamins amino-acids and minerals are more bio-available. Sprouted einkorn blueberry muffins are a healthy, nutritious, super food breakfast treat.
I have a confession to make…we, real-for-real, buy frozen blueberries in a 5lb bag. Ughem, each month! I mean it could be worse, right!? At least blueberries are really healthy. Needless to say we like blueberries! We have quite a few uses for blueberries, not just sprouted einkorn blueberry muffins.

A few of my blueberry uses
I have 5 kids so I meal plan as best as I can. Every Monday I make oatmeal for breakfast and prepare the refrigerator oatmeal for breakfast on Wednesday. I put some blueberries in the refrigerator oatmeal. Thursday morning I make blueberry muffins for breakfast. Occasionally, I let the kiddos have frozen blueberries for a snack. (not too often, it gets expensive ) The best use for blueberries? As a “please stop crying, I’m making dinner as fast as I can” snack for the teething toddler. This face says it all!!

Blueberry
Blueberries are the most nutrient dense of all berries. They contain 1/4 of your daily recommend needs in Vitamin C, Manganese, and Vitamin K. Blueberries are a low calorie fruit (57cal/cup) with a low glycemic load of 6.

Cinnamon Raisin Muffins
Ingredients
- 1½ cups Organic Flour
- ½ cup sugar or sucant
- 1 tsp baking powder
- ¼ tsp salt
- 1 tsp vanilla
- 1 pastured eggs
- ¼ cup melted butter or coconut oil
- ¾ cup milk
- 1 cup raisins or ½ cup of raisin + ½ cup cranberries
- 1 tsp cinnamon
Instructions
- Preheat oven to 400 degrees
- Melt butter or coconut oil
- Mix together dry ingredients. Flour, sugar, baking powder, cinnamon and salt.
- Add to the dry ingredients egg, milk, and vanilla.
- Mix well and then add the melted butter.
- Gently fold in raisins.
- Scoop batter into a greased 12 hole muffin pan.
- Bake @ 400 degrees for 20 minutes.
- I add this step to hold off the kiddos….Cool for 10 minutes. Enjoy!
I love my stoneware muffin pan…he lives in my oven just waiting for the opportunity to make sprouted einkorn blueberry muffins or dinner rolls.
