
Oh my! Life has been so crazy and overwhelming! We have so many changes coming. I feel the Lord, through this chaos, saying, “Be Still”. I am reminded of a blog I read the other day from Stacey Pardoe, “The Secret to Maintaining Peace when your Life is Full“, again, the message from the Lord, “Be Still”.

Getting in the kitchen and creating something always gives me peace. So in an effort to just be still I’m in the kitchen canning some peaches we got in our recent Azure order.
Peaches are super easy to can. I used a freestone variety so the pit is easily removed. I sliced up the peaches, removing the pit. Put the sliced peaches in quart jars and then fill with a quick syrup.
To make the syrup boil 5 cups of water to 2 cups of sugar and add in 1 Tablespoon of vanilla extract. Pour the syrup over the peaches and seal with new lids. This makes 4 quarts of peaches.

Place the jars of peaches in a stock pot. Fill the stock pot with water, make sure you have at lease 2″ of water over the top of the jars. Bring the water in the stock pot with the jars of peaches to a boil. Boil for 30 minutes. This process of boiling with remove any air from the jar and sterilize anything that is inside the jar. When the time is up remove the jars from the water and set in location that they wont be disturbed for 24 hours. The undisturbed 24 hour period will make sure the seal is set. If you have a jar that doesn’t set and the seal pops up you can put it in the refrigerator and eat it.

Rrrgh! I had one of my jars bust during the hot water bath. So I only ended up with 3 jars of peaches. Bummer! But, look at that gorgeous color!
