When I was making mustang grape jelly last summer I never really realized how happy it would make me this winter making these thumbprint cookies with jam.

These thumbprint cookies are a dense yet flaky cookies with the thick dollop of jelly center. You can use any jelly or jam you like for the center of these cookies. I thought about using some pear butter or even some chocolate in the center.

A fun craft to do with kids. The thumbprint cookie dough recipe is so easy, then all you need is a few little helpers. These two little helpers. One getting in to mischief and the other with a fake smile. {{Love}}

Thumbprint Cookies
A dense yet flaky cookie with a thick jelly center.
Ingredients
- 12 Tbsp butter
- ⅔ cup powdered sugar
- 2 tsp vanilla
- 2 cups sprouted einkorn flour (2½c if using regular flour)
- 1 egg
- 3 tbsp milk *approx
Instructions
- Cut with a pastry cutter sugar, butter, and vanilla
- Add flour and continue to cut.
- Add in egg and 1 Tablespoon of milk at a time till the dough comes together.
- It needs to just stick when pinched
- Refrigerate for 30 minutes.
- Preheat oven to 325F degrees.
- Scoop and roll into even balls.
- Press your thumb pretty deep into the middle of the ball.
- In the thumbprint spoon a small amount of jelly. Fill only half of thumbprint with jelly.
- Test bake 2 or 3 cookies.
- Bake for 10 -15 minutes.

If your test cookies run or spread too much add a little more flour to the dough. If your jelly takes off and makes a mess everywhere you can try making your thumbprint deeper and/or add less jelly.
