There are so many health benefits to using lard. Lard is actually lower in saturated fat than butter and is almost 50% monounsaturated fat. The only oil higher is olive oil. Lard is high in vitamin D almost 500IU per teaspoon. You want to make sure you source it well. Where to Start
First make sure the lard is cold but not frozen. With a sharp knife cut the lard into chunks.

Next run the chunks through the food processor. This is going to break down the fat into easily meltable mash.
Low and Slow
In a large stock pot heat the fat on very low heat. My stove has a warming option, that is what I use.

As soon as you start getting liquid fat you can start scooping it off. I strain mine through and fine strainer and a coffee filter. (I use 1 coffee filter per jar I strain off) This may be the most tedious part of rendering lard. π
After it has cooled, I put my lard into the freezer until I need it. Use it for the softest tortillas EVER!

What kind of fat are you using? Leaf lard? Or back fat? Both maybe?
