Queso Made with Real Food Ingredients

We aren’t really into sports and sporting events but my kids love an excuse to have a snack buffet for the day. Sometimes for birthdays, birthday parties, or even Super Bowl I will make a snack buffet for the day. A family favorite is queso made with real food ingredients. No processed cheese-like block in this cheese dip baby! Have you tried to pronounce some of the preservatives in that processed cheese-like block? Don’t even look at the sodium content!

Real Food Ingredients

My recipe for queso simply uses butter, flour (for the roux), cheese, milk, tomatoes, chilis, and meat if you like. (I use leftover taco meat if I have it) I have a dear friend who even makes her own farm cheese for queso. Her process is so simple and uses only 3 ingredients. Check out her YouTube instructional video.

Easy Cheesy

The process to make this queso is really easy and versatile. First, let’s make the roux. In a skillet, over low-medium heat, melt 2 Tablespoons of butter. When the butter is melted add 2 Tablespoons of flour. Whisk the two ingredients together. It will foam a little, that is ok.

At this time, add onions and chilis if you want them. Whisk in 2 cups of milk. Continue to whisk the roux until it becomes thick like gravy or coats the back of a spoon. Add in tomatoes, or pre-made salsa, and taco meat if you are including meat.

Turn off the heat under the skillet and add 2 cups of cheese. Continue to whisk till the cheese is melted. Be sure to turn off the heat or you run the risk of your cheese separating….sad, sad, sad. You can add salt, paprika, or even chili powder if you like….season it up to fit your needs!
