20 Minute Instant Pot Chicken Tortilla Soup

A quick, simple, hearty lunch for a rainy, chilly day. In only 20 minutes the instant pot chicken tortilla soup is ready to eat! Just the right amount of spice to warm you up.

I spent the day working in the garden. We were planting some onions, garlic, and ughem, replanting carrots. The highs were only in the 50’s but the sun was out!

Being a chilly day I was really craving some soup! When we finished in the garden it was already 2pm so I needed to throw something together quick to fill 5 tiny tummies. The instant pot tortilla soup was born! In 20 minutes we had some warm soup in our bellies!

Frozen chicken thighs are fine, I had a package of about 9 chicken thighs. I tossed them in the instant pot with about 8 cups of water.

I used prepared salsa because I didn’t have any chopped tomatoes, onions, or chili’s to go into the soup. Next time I might try taco seasoning mix instead of the dry ingredients.

Toss all the ingredients in the instant pot together and cook on high pressure for 20 minutes.

Ingredients

9 chicken thighs
8 cups water
1 16oz jar of roasted tomatoes
½ cup prepared salsa
1 Tbl Oregano

Instructions

Put all the ingredients in the instant pot.
Set the instant pot on "Manual" "High Pressure" for "20 Minutes"
When the soup in done cooking remove the chicken to a plate and shred with 2 forks.
Dump the chicken and associated juices back into the Instant Pot.
Top a bowl of this warm soup with tortilla chips, cheese, sour cream, and/or avocado and maybe some fresh lime.
Relax and Enjoy!

Top with some sour cream, cheddar cheese, and avocado. Perfect as a side or a meal by itself.

I love being able to whip up a healthy lunch for my family in the same amount of time it would have taken to make sandwiches.
