Quick and Easy Beef Enchiladas
My family LOVES enchiladas and as you may have gathered my family are also very picky eaters!! I struggle with my desire to try new recipes and also get my family to eat my trial and error recipes. This recipe for these quick and easy beef enchiladas was a winner.

We got home from church today and I was completely unprepared to make lunch. I was hoping to go out for some mexican food. Mexican food is my weakness, everytime.
Preparing for the move
We are in the middle of a bathroom remodel because we are moving in a few months. My husband starts his new job in South Texas next week so we are trying to get the house ready to sell. All that being said, there is no extra time or money to go out to eat. So while my husband goes to the hardware store for the 10,000th time I’m going to make my own mexican food lunch!
Beef Enchiladas Simplified
I want enchiladas to to be simple, delicious, and a healthy option to restaurant enchiladas. To simplify these beef enchiladas, lay the corn tortillas out in a single layer, similar to stacking a lasagna, instead of rolling the corn tortillas through oil, or trying to heat them without them cracking.
The Process
First, pour a little juice from some West Texas Chili in the bottom of a casserole baking dish. Then lay out a single layer of corn tortillas. Brown a pound ground beef, you can add a teaspoon of taco seasoning mix for flavor or just some salt. Layer the cooked ground beef on top of the layer of corn tortillas. Sprinkle cheese on top of the ground beef then cover with another layer of corn tortillas. Finally, on top of the final layer of corn tortillas generously pour 4 cups of West Texas Chili and finish with the cheese of your choice.
Bake at 350′ for about 20 minutes, just until the cheese is starting to brown.
For a side dish you might add some chips and homemade queso.
