Have you noticed the craziness of procuring meat from the grocery store lately? I have a few local sources for beef but the craziness has me trying to make a few more meatless meals. Meatless meals for me and the kiddos, the man of the house would not be too interested in a meatless meal. LOL

Instant Pot Black Bean Soup

My kids love beans and rice, but there are just so many times during the week you can eat beans and rice so we had to come up with a new way to eat some yummy beans. This black bean soup was a hit with all the kids. It can be a meal by itself or as a side for some tacos….yum!

Instant Pot Black Beans

First you need to start with a delicious pot of black beans. Since we eat a lot of beans I order organic beans in bulk from Azure Standard. When I was younger I struggled with a good flavorful pot of beans. This recipe is foolproof and has great depth of flavor every time.

Equipment

  • Instant Pot

Ingredients
  

  • 2 cups dry black beans
  • 4 cups water or broth
  • 1 Tbsp oregano
  • 1 tsp cumin or cumin seeds
  • 1 Tbsp salt
  • 2 Tbsp lard or bacon grease
  • 4 cloves garlic
  • ½ onion

Instructions
 

  • Everything in the pot
  • Cook on bean/chili setting for 45 minutes.

This recipe calls for lard or bacon grease. If you are not sure about this ingredient make sure to read about the benefits of lard, but you can substitute grass fed butter if you like. Make sure you are using a Real salt to glean all the beneficial minerals.

Black Bean Soup

Add to your beans 1 can of chopped tomatoes with chili’s and 4 cups of broth. Take about 1 1/2 cups of beans and blend in a blender until smooth. Add the blended beans back to the black beans (say that fast 3 time…shhesh!). I blended and reincorporated 3 times, I still wanted some whole beans in the soup. Add to the soup 1 cup of water, or more depending on the liquidity you prefer for the soup.

  • Instant Pot

Ingredients
  

  • 4 cups black beans
  • 1 can chopped tomatoes with chili's
  • 4 cups chicken broth
  • 1 cup water

Instructions
 

  • Add to the black beans tomatoes with chili's and chicken broth.
  • In a blender blend about 1½ cups of beans at a time.
  • Add pureed beans back to black beans and stir to incorporate.
  • Repeat 2 or 3 times.
  • Add 1 cup of water to thin soup consistancy.

This black bean soup can be topped with sour cream, pico de gallo, or avocado. I wish I had some fresh cilantro and maybe even some lime. We paired it with some left over tacos for a quick and healthy lunch.
