Spring is here and so is strawberry season. There are not too many things better than a big, fat, red, juicy, strawberry picked at the peak of the season; except double strawberry shortcake. Not only are there strawberries on top of the cake but also cooked into the cake.

We are in the process of moving and the place we are moving has it’s own strawberry festival each year. People come from all over the state to buy strawberries at this festival. I am blessed to be able to buy fresh strawberries straight from the farm. Strawberry season is pretty short around here, it gets hot very quickly. We need to over-indulge while we have the opportunity Having double strawberry shortcake for breakfast is the best way to do it!

Old Fashioned Warm Milk Cake
For the cake I am using an old fashioned warm milk cake. Warm milk cake will help me use up some extra eggs and milk because spring is also the time when the chickens are laying and the cows are in milk.

Old Fashioned Warm Milk Cake
Ingredients
- 4 eggs room temperature
- 2 cups sugar
- 1 tsp vanilla
- 2½ cups flour
- 1 Tbsp baking powder
- 1 cup sliced strawberries
- 1¼ cups milk
- 10 Tbsp butter
Instructions
- Preheat oven to 350°
- Beat eggs in a mixer at high speed for 5 minutes until thick and fluffy.
- In a small saucepan, begin to heat milk and butter until butter is melted.
- Gradually add sugar to the eggs and continue to beat until mixture is light and fluffy.
- Add in vanilla at a low speed.
- Add in flour and baking powder.
- Add in chopped strawberries.
- Slowly pour in milk and butter mixture and mix until smooth.
- Pour into a greased 13×9 baking pan and Bake for 30-35 minutes until a toothpick comes out clean.
Strawberries and Cream
Slice 2 lbs of strawberries and add 1 Tbsp of sugar. Stir until well combined.
Whip 2 cups of cream with 1 Tbsp of sugar and 1 tsp of vanilla in a high speed blender on the “whip” option.
Double Strawberry Shortcake
The build is a layer of sliced strawberries on top of the warm milk cake and topped with a huge pile of whipped cream.
