“Award Winning” Oatmeal Cranberry Cookies

Sometimes you just need a cookie! When everything in your world is wrong sometimes a batch of oatmeal cranberry cookies can momentarily right the world.

Right the Wrong with Oatmeal Cranberry Cookies

OMGosh! Who can relate? Everything is crazy! For our family, my husband is working 150 miles away and is only home on the weekends. We are trying to finish up our house so we can sell it and move into our RV. The kids are on electronics detox and home school school work catch up. Jesus give me the strength. Just looking around the house at all the work we still need to do to sell our house induces chest pains, shortness of breath…anxiety.

Today I’m going to struggle through housework, chores, character training, schoolwork, and lets not forget potty training. I know there will be extra laundry because of the beautiful rain we had last night and the mud and potty training. But I have sweet relief coming…oatmeal cranberry cookies. LOL

Seriously, I love to cook and an afternoon sweet treat or the hope of trying out a new recipe can give me something to look forward to.

The Oatmeal Cranberry Cookie

Ya’ll I never have brown sugar but brown sugar is easy to replicate with white sugar and some molasses. This recipe uses no brown sugar. I also like to use fresh ground einkorn flour. If you don’t have einkorn flour that is ok just use 1 1/2cups of regular organic flour.

Oatmeal Cranberry Cookies

Deep flavor from the molasses and einkorn flour. A burst of sweet tanginess from cranberries. Made with real food ingredients.

Servings 3 Dozen

Ingredients
  

  • 1 cup grass fed butter
  • 1¼ cup sugar
  • 1½ Tbsp molasses
  • 2 eggs
  • ½ tsp real salt
  • 1 tsp vanilla
  • 2 cups einkorn flour if using regular organic flour use 1¼ cups
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3½ cups rolled oats
  • 1 cup cranberries

Instructions
 

  • Heat oven to 350°
  • Cream sugar, molasses, and butter at a medium speed.
  • Scrape down the sides of the bowl and add eggs and vanilla.
  • Mix until smooth.
  • Add combined flour, baking soda, salt, and cinnamon.
  • Mix well.
  • Add in oats and cranberries.
  • Scoop out approximately 2Tbsp scoops of cookie batter onto a silicone baking mat.
  • Bake in a 350° oven for 10 minutes.

Ahhh…That was good!

I made it through the day and had some oatmeal cranberry cookies. All is good! It even looks as though it might rain again. Love me some rainy days!

These cookies are now “award winning” oatmeal cranberry cookies. These cookies won 1st Place at the San Saba County Youth Fair in 2023!
