Cauliflower Chocolate Pudding

Don’t knock it till you try it. The texture of cauliflower chocolate pudding is perfectly smooth and creamy. Kid approved! They were none the wiser. whaaahaaahaa!

Kids and Veggies

As I’ve shared with you before my family is so picky. I am seeing some light on the horizon because my bigger kids are starting to enjoy more foods, including vegetables. Since they were little I’ve always made them try new things and everyone gets a least one vegetable on their plate. The little kids always give me push back about eating any veggies. My husband…nope! He doesn’t even want to smell a veggie!

Cauliflower Chocolate Pudding

When I saw an idea for cauliflower “cream” as a a soup thickener I thought I would give pudding a try and see if it could work. It would be awesome to try adding in peanut butter for a chocolate peanut butter pudding…I’ll let you know if it works. 😉

It gives me great pleasure to sneak veggies in on my kids and cauliflower is an awesome place to start! Cauliflower is high in fiber and B vitamins, yay! It also contains choline which is essential for learning and memory. (source)

Instant Pot

In the instant pot cook 2 -10 ounce bags of frozen cauliflower in 3/4 cups of water for 2 minutes on high pressure. I buy cauliflower by the case from Azure Standard.

High Speed Blender Blendtec

Let the cooked cauliflower cool for about 5 minutes and then pour the water and cooked cauliflower into a high speed blender…I love my High Speed Blender Blendtec. Add in maple syrup, butter, vanilla, and cocoa powder. Blend on medium speed for about 60 seconds. Creamy warm pudding!!

Cauliflower Chocolate Pudding

Eat your veggies kids! And they will! A smooth creamy warm chocolate treat!

Equipment

  • Instant Pot
  • High Speed Blender

Ingredients
  

  • 2 10 ounce frozen cauliflower
  • ¾ cups water
  • ⅓ cup cocoa powder
  • ½ cup maple syrup
  • 3 Tbsp grass fed butter
  • 1 tsp vanilla

Instructions
 

  • In the instant pot add cauliflower and water.
  • Cook on "manual" "high pressure" for 2 minutes.
  • Manual release pressure and cool for 5 minutes.
  • In the high speed blender add cauliflower and associated juices, maple syrup, butter, vanilla, and cocoa powder.
  • Blend on meduim speed for 60 seconds.
  • Serve warm or cold.

Notes

**Option Add 1/4 cup of peanut butter for a chocolate peanut butter pudding cup.**

Follow Up

My kids do not know the ingredients of the cauliflower chocolate pudding. I asked them if they thought it would be good with peanut butter for a chocolate peanut butter cup flavor. They agreed!! I made the pudding a second time and added 1/4 cup of peanut butter instead of the butter. Ohhh, I must say, I believe I like the peanut butter chocolate pudding cup the best.
