I love all things spicy. Pickled jalapenos in brine have amazing probiotic healthy benefits . Naturally fermenting jalapenos is great way to preserve them so you can have crunchy sliced jalapenos all winter long. So add a little spice and a few good bacteria to your gut. Win win!
How to Ferment Jalapenos
No fear…it is super easy to brine jalapenos! For a pint of sliced jalapenos you’ll need about six peppers. Slice the peppers and put them into your pint jar.

To the sliced jalapenos, add 2 cloves of garlic and 1 Tablespoon of salt. Make sure you are using a good mineral or sea salt.

Fill your pint jar with filtered water and shake well.
Leave on the kitchen counter for 3-5 days to naturally ferment. Make sure to distance your jalapeno ferment from other ferments so they don’t cross contaminate. When the water starts to get cloudy and you see little bubbles on the jalapenos and at the top of the water, they’re done! Of course, you can always sample the jalapenos on a daily basis to see if they are as you like them.
Top some good ‘ole beans, chili or cram a few naturally fermented jalapenos into a taco! YUM!
