Making Sourdough Bread in a Bread Machine

We are still living in our travel trailer till we find a new house. I love fresh homemade bread but there is no room in the oven to bake a loaf of homemade bread. This is a super simple sourdough bread that is soft enough for lunchtime sandwiches.

A Note About Sourdough

A long fermented sourdough has been proven to be beneficial for gut heath. The souring process releases nutrients and makes the nutrients more bio-available to the body. Need a sourdough starter? Here is the easiest sourdough starter recipe.

I have struggled with sourdough over the years. My bread was the flat, dense, and overly crusty. My sourdough bread made better croutons than sandwiches. This bread machine recipe changes all that, it takes all the work out of sourdough. Your going to find that you want make this sourdough bread several times a week.

Step by Step Sourdough Bread

This bread recipe is, start to finish made in the bread machine. First ingredients to add to the bread machine is the hot water, butter, sugar, and sourdough starter. Next add all the dry ingredients, flour and salt.

The bread machine I have is a Zojirushi, it has a homemade cycle. I can adjust the time for each step of the bread making process. The steps and times are as follows REST-10min, KNEAD-25min, RISE1-2hours, RISE2- 2 hours, and BAKE-55min. At the end of the 2nd KNEAD step I will remove the dough and make sure it is a uniform loaf shape. The rest is up to the bread machine.

Equipment

  • Bread Machine

Ingredients
  

  • 1 cup hot water
  • ¼ cup soft butter
  • 3 Tbl sugar
  • ½ cup sourdough starter
  • 4 cup organic bread flour
  • 1 tsp salt

Instructions
 

  • Add wet ingredients to bread machine load pan, hot water, soft butter, sugar, and sourdough starter.
  • Add dry ingredients on top of wet ingredients to loaf pan. Flour and salt.
  • Create a homemade bread cycle with the following steps and times.
  • REST-10min, KNEAD-25min, RISE1-2hr, RISE2- 2hr, BAKE-55min

Notes

I had some problems with my loaf of bread collapsing. If you notice this happens for you increase the knead time and/or decrease the rise time.You want as long a rise time as possible but because the dough is kept warm it speeds up the activity of the yeasts. You may need to decrease the rising time.
